Eileen Erickson's Potato Rolls

I'm making these for dinner tonight....

1 1/2 Cups warm water
1 TBS dry yeast
2 eggs
1 Cup warm mashed potatoes
2/3 Cup Sugar
1 1/2 tsp. salt
2/3 Cup Shortning
7-8 Cups Flour

Mix water, yeast, eggs, potatoes and let sit 5 minutes.
Add sugar, salt, shortning, and mix.
Add Flour a cup at a time till a nice dough forms.

Let rise an hour, punch down, rise again, then shape into rolls.

Bake at 400
